This week I got to try Herbie’s Spices Native BBQ Spice Mix in a recipe they have given us for 17 Bright Ideas.
Here is a terrific and simple recipe to use the spice mix in and spice up an evening dinner.
MINI POTATO CAKES WITH A DIFFERENCE
– 3 medium-sized potatoes
– 3 teaspoons Herbie’s Spices Native Barbecue spice mix
– 1 egg
– 1 tablespoon milk
– 1 cup breadcrumbs
– olive oil for frying
I would suggest that if you are making this dish for a week night family dinner, maybe make the potato cakes earlier and then fry them up when you need dinner. That way you can avoid the mad dinner rush.
The first thing I noticed about using the spice mix was the amazing fragrance that it had. It just filled the entire kitchen with the gorgeous fragrance of lemon myrtle, coriander and wattle seed.
My daughter loved to help me to shape the potato cakes into little balls, which made this quite a fun dinner for the kids to help with.
Obviously, with any dinner, the proof is in the tasting and it seemed to be quite the success. My one year old was particularly taken with this dinner and finished his plate, which is a rare thing.
With younger kids, however, you might want to add 1 to 2 teaspoons of the mix just to make it a bit milder but ramp it up for adults. I think it could be easy to make two batches.
Don’t forget that the spice mix can be used on meats and fish when grilling, roasting or BBQing. I think Herbie’s spice mix is a real bright idea for making a meal something more special even if you don’t have amazing cooking knowledge because they develop the flavour profile for you and all you have to do is add it to your food.
