Asian Snapper with Sweet Chilli and Lemongrass

Have you ever said “I can’t cook fish, its too difficult!” Well, time to think again with this quick, delicious and healthy Asian Snapper with Sweet Chilli and Lemongrass recipe the whole family will love and won’t stress you out in the kitchen. Cooking and preparation time: 30 minutes, Serves: 4

  • – 4 x snapper fillets
  • – ½ cup Anathoth Farm Sweet Chilli Relish
  • – 2 cloves garlic, chopped
  • – 1 tbsp grated ginger
  • – 2 tbsp lemongrass, finely chopped
  • – 1 tsp sesame seed oil
  • – 1 tbsp peanut oil
  • – 1 long red chilli, thinly sliced
  • – 1 lemon
  • – 2 tbsp soy sauce
  • – 1 cup bean sprouts
  • – 1 bunch coriander
  • 1) In a large shallow dish mix the sesame seed oil, ginger, lemongrass, sweet chilli relish, garlic and soy. Add the fish and cover with the marinade.
  • 2) In a large frypan over medium heat, add the peanut oil. Once the oil is hot, place the fish pieces into the pan. Cook uncovered for 4 minutes on each side or until cooked right through.
  • 3) Place the cooked fish on a serving dish and top with bean sprouts, coriander, chilli and lemon wedges.
  • Hint: Before cutting the lemongrass, use the back of the knife to bruise it. This will release the natural oils and flavour.
