Carrot and Parsnip in Honey

This is a fantastic way to use parsnips when they are in season.

  • 400 g carrot (cut into same size pieces as parsnips)
  • 400g parsnip ( cut into same size pieces as carrots)
  • 2 tablespoons honey
  • 3 star annis
  • 1 cinnamon stick broken in half
  • 2 teaspoons thyme
  • salt and pepper to taste

In a large pan add 2 tablespoons olive oil.  Add all ingredients except honey.  Cook for 20 mins on medium heat.  Add honey and cook for additional 15mins.  Add a splash of water to deglaze the pan and cook until water removed.  Serves 3-4 adults.
