This is a fantastic way to use parsnips when they are in season.
- 400 g carrot (cut into same size pieces as parsnips)
- 400g parsnip ( cut into same size pieces as carrots)
- 2 tablespoons honey
- 3 star annis
- 1 cinnamon stick broken in half
- 2 teaspoons thyme
- salt and pepper to taste
In a large pan add 2 tablespoons olive oil. Add all ingredients except honey. Cook for 20 mins on medium heat. Add honey and cook for additional 15mins. Add a splash of water to deglaze the pan and cook until water removed. Serves 3-4 adults.
