Chicken Nuggets and Chips

This recipe is sure to be a favourite with the entire family. A delicious recipe from Lynton Tapp – Runner-up Masterchef 2013!

  • 500G chicken tenderloins
  • Dredge:
  • 2 eggs
  • 1 cup of flour
  • Crumb For Nuggets:
  • 2 cups toasted oats
  • zest of one lemon
  • 2 tbs of salt
  • 2 tbs of chopped rosemary
  • 1 tbs garlic powder
  • Wedges:
  • 2 sweet potato
  • 2 sprigs of rosemary
  • 3 cloves of garlic
  • 1 tbs salt

1) Preheat oven to 200C 2) Peel and cut your sweet potatoes length ways into 2cm x 1cm batons. 3) Line a baking tray with baking paper, add the sweet potato chips and tear over the rosemary and crush the garlic over the top. Season with salt and place into oven for 25-30 minutes. (You want the oven hot because you want to char the sweet potato slightly as it cooks.) 4) While the sweet potato chips are cooking, combine the crumb ingredients in a food processor and turn machine on high for 30-45 seconds, depending on how fine you want the crumb to be. 5) Once the crumb has been made its time to crust your chicken nuggets and start baking them. Place your crumb, eggs and flour in separate bowls, dust the tenderloins in flour, followed by submerging in the egg wash and finally into your crumb mix. 6) As you crumb each nugget transfer to a baking tray lined in baking paper. 7) Cook the nuggets in the same oven as the wedges for 20-25 minutes or until cooked through.
