Creamy Ham and Spinich Pasta



Super quick and easy and using light n creamy reduces the fat content compared to average creamy pastas.  Great on a cold wintery night when you are too tired to make a fuss.

  • 400 grams penne pasta
  • 1 tablespoon healthy oil / spray oil
  • 200 grams low fat ham
  • 10 mushrooms
  • 375 mls light n creamy
  • 2 tablespoons cornflour
  • 1 bag baby spinach

Cook pasta in a large pot of boiling salted water for approx. 10 – 15 mins. Heat oil in a large frypan and cook ham for 1 min. Add in mushrooms and cook for an additional 3 mins. In a bowl mix cornflour and light n creamy. Add to pan along with a bag of spinach. Cook for 2 mins or until spinach has wilted. When cooked, drain pasta and add to frypan. Toss through sauce and serve.
