Dark Chocolate and Ginger Slice

  • Ginger Biscuits 
  • 50g butter
  • 4tbl golden syrup
  • 50g soft brown sugar
  • 175g SR flour
  • 1tsp ground ginger
  • Slice
  • 150g ginger biscuits (as above or bought Gingernuts) chopped roughly
  • 125 butter
  • 200g dark chocolate (use good chocolate that you like to eat – I use Old Gold)
  • 1 tbl brown sugar
  • 2 tbl golden syrup
  • 80g Buderim Naked Uncrystallized Ginger, chopped roughly
  • pinch of sea salt 
  • Biscuits –Preheat the oven to 190C and line 2 baking trays with baking paper Melt butter, sugar & golden syrup in a pan until melted & the sugar is dissolved. Leave to cool Stir flour & ginger into the sugar mixture – mix well Place teaspoonfuls of the mix on a baking sheet (5cm apart) and flatten slightly with a spoonBake for 10-15 minutes, remove from oven & cool slightly
  • Slice -Line a 20cm square tin with foil Melt the butter, dark chocolate, sugar & golden syrup over a double boiler, remove from heat Mix in the salt, biscuits and ginger and pour the mixture into the tin, and set in the fridge for at least 3 hoursRemove from fridge and lift out with the foil, cut into 6 x 4 rows, so 24 pieces.
