Dark Chocolate and Ginger Slice

 Pie Society Anyone for Dark Chocolate and Ginger Slice? The smell of ginger and the taste of chocolate are a great mix in any kitchen but work especially well at Christmas time. Emma from Pie Society (her Sydney based meal gifting business which produces all-natural handcrafted pies, sides and sweets) has kindly shared this sweet treat recipe. It makes a perfect home made Christmas gift or sweet plate to take to a Christmas party. Makes 24.

  • Ginger Biscuits 
  • – 50g butter
  • – 4tbsp golden syrup
  • – 50g soft brown sugar
  • – 175g SR flour
  • – 1tsp ground ginger
  • Slice
  • – 150g ginger biscuits (as above or bought Gingernuts) chopped roughly
  • – 125g butter
  • – 200g dark chocolate (use good chocolate that you like to eat – I use Old Gold)
  • – 1 tbsp brown sugar
  • – 2 tbsp golden syrup
  • – 80g Buderim Naked Uncrystallized Ginger, chopped roughly
  • – pinch of sea salt
  • Ginger Biscuit
  • 1) Preheat the oven to 190C and line 2 baking trays with baking paper.
  • 2) Melt butter, sugar & golden syrup in a pan until melted & the sugar is dissolved. Leave to cool.
  • 3) Stir flour & ginger into the sugar mixture – mix well.
  • 4) Place teaspoonfuls of the mix on a baking sheet (5cm apart) and flatten slightly with a spoon.
  • 5) Bake for 10-15 minutes, remove from oven & cool slightly.
  • Slice
  • 1) Line a 20cm square tin with foil.
  • 2) Melt the butter, dark chocolate, sugar & golden syrup over a double boiler, remove from heat.
  • 3) Mix in the salt, biscuits and ginger and pour the mixture into the tin, and set in the fridge for at least 3 hours.
  • 4) Remove the Dark Chocolate and Ginger Slice from fridge and lift out with the foil, cut into 6 x 4 rows, so 24 pieces.
