Fettuccini Boscaola

A quick pasta dish that looks like you would get in a restaurant.  Serves 4.

  • 400g fettuccini
  • 375ml tin of Carnation Light and Creamy
  • 1 brown onion (diced)
  • 175g (approx. 8 rashes) bacon (diced)
  • 2 cups (approx. 10-12) mushrooms (sliced)
  • 1 tsp oil or oil spray
  • parmesan cheese

 

Cook fettuccini in boiling, salted water according to packet directions. Heat oil in frypan over medium heat. Add onions, stirring until soft. Add  diced bacon. After 5 mins, add mushrooms and stir. Once mushrooms look soft, add in Carnation Light and Creamy and stir well. Drain cooked pasta then add to bacon and mushroom mixture and combine well. Serve with parmesan cheese and season to taste.
