Fig Cashew Energy Balls are a quick and easy snack to make the whole family. They are the perfect for a mid morning or afternoon snack. Best of all, they have no added sugar and made with 100% natural ingredients, including goji berries. This recipe is from Carolyn Hartz's latest cookbook, Sugar Free Baking ($29.95). Prep time: 10 minutes, Makes: 18 walnut size balls.


  • - 100g almond meal
  • - 130g raw cashews
  • - 4 dried figs, chopped
  • - 2 tsp Perfect Sweet® xylitol
  • - 1 tbsp cacao or good quality cocoa powder
  • - 20ml coconut oil, melted
  • - 50g dried goji berries
  • - Desiccated coconut for coating


  • 1)      Process all ingredients except the goji berries in a food processor, until smooth.
  • 2)     Mix in the goji berries and shape into 18 walnut sized balls.
  • 3)     Roll the balls in the coconut and store in the fridge.
  • 4)     Enjoy your Fig Cashew Energy Balls!
