Kangaroo Sausage Rolls with Tomato and Date Sauce

Lynton Tapp Have you ever cooked Kangaroo for the family? It is incredibly healthy and very “Australian”. Lynton has created this fantastic dish that uses Kangaroo mince is a way that will encourage everyone to give it a try and no doubt enjoy – who doesn’t love a sausage roll! 

  • Sausage Rolls:
  • 600g kangaroo mince
  • 400g lamb mince
  • 3tbs Dijon mustard
  • handful finely chopped parsley
  • 100g finely chopped toasted pinenuts
  • tbs salt
  • generous seasoning of black pepper
  • two finely diced onions
  • 5 cloves of garlic
  • 5-6 sheets of store bought puff pastry
  • Egg Wash:
  • 1egg
  • 1tbs milk
  • Tomato and Date Sauce:
  • 450g ripe tomatoes
  • 100g pitted dates
  • 2tbs sherry vinegar
  • 250ml chicken stock reduced by 2/3
  • pinch of salt
  • Sausage Rolls: 1) Preheat oven to 220C. 2) In a large mixing bowl combine the sausage roll mixture thoroughly, as we aren’t using eggs or breadcrumbs to bind the mixture don’t be afraid to work the mix vigorously for 3-4 minutes. 3) Once the mix is made its time to make the sausage rolls. Lay out your defrosted puff pastry sheets on a lightly floured bench, at the edge of the pastry sheet closest to you. 4) Lay the mince the complete length of the sheet, forming a 2-3cm wide log. 5) Roll the mince mix up in the puff pastry, making sure as to use your egg wash to glue the pastry sheet to itself in the final roll. 6) Wash the sausage roll with the egg wash and cut into 4-5 pieces depending how big you want the rolls to be. 6) Repeat process until all the mince has been used. 7) Transfer the sausage rolls to a baking tray lined in baking paper and cook in preheated oven for 25-30 minutes or until cooked through. Tomato and Date Sauce: 1) This is a quick and simple sauce that can be made while the sausage rolls are cooking. In a food processor place all the ingredients into the bowl, process for 1 minute and transfer to a saucepan. 2) Simmer sauce on a medium heat for 15-20 minutes with the lid off. 3) Adjust seasoning once finished cooking and transfer to a serving bowl.
