Moroccan Spiced Steak with Couscous Salad

Quick, tasty and healthy and kid friendly.  What more could you ask for!

  • 2 cups water
  • 2 tsp. chicken stock powder
  • 1 tbsp. olive oil
  • 2 cups couscous
  • 1 continental cucumber
  • 1 capsicum
  • Non-creamy salad dressing of your choice ( Balsamic, Vinaigrette, Italian, French etc.)
  • 500g steak
  • 1 tbsp. Moroccan spice blend
  • 1 tbsp. healthy oil / spray oil
  • salt and pepper to taste

In a medium saucepan (that has a lid) bring 2 cups of water to the boil.  Add chicken stock powder and stir until dissolved.  Add 1 tbsp. oil.  Take off heat, stir in couscous, put on lid and let sit for 5 mins.  Finely dice cucumber and capsicum and place in a salad bowl.  Fluff couscous with a fork and add to cucumber and capsicum. Dress with salad dressing of your choice, season to taste and mix well.  Sprinkle Moroccan seasoning on steak and grill to taste.  Serve with couscous salad.
