Mums Old Style Chicken Curry with Apples

I loved this curry as a kid.  It is in no way traditional and perhaps not the most elegant of dishes but its yummy and my kids now love it too!

  • 500g Chicken breast
  • 2 Celery Sticks
  • 1 Onion
  • 2 Apples
  • 2 cups frozen peas (or fresh zucchini works well too!)
  • 2 tbs margarine
  • 2 tbs flour
  • 1/2 tbs curry powder
  • 2 cups milk
  • 2 tbs vegetable oil
  • 2 cups Rice

 

Slice onion and chicken and sauté in oil until browned,  Add in celery, apple and peas and cook for 3 mins.  Remove chicken and vegetable mix from pan to another bowl.  Place pan back on heat and add margarine.  Once melted add flour and curry powder and cook for 1 min.  Turn heat down to low.  Slowly (if you do it fast it curdles!) add in milk and stir with a whisk until sauce smooth.  Add chicken and vegetable mix back to pan and simmer for 10mins (stirring occasionally) or until chicken is cooked.   Serve with boiled rice.

 

Note – ½ tbs curry powder very mild.  1 tbs mild, 2 tbs spicy.
