A super healthy recipe, great for weight loss and suitable for all the family.
- Serves 2
- 2 eggs
- 100g low-fat ham, chopped roughly
- 1½ cups frozen peas, carrots and corn
- 250g packet steamed brown basmati rice
- 160g skinless chicken breast, cut into small cubes*
Put eggs in a saucepan to boil.
Microwave vegetables for approximately 4 minutes or until cooked
through.
Chop ham into small pieces.
When vegetables are cooked, place rice in microwave and cook for 2
minutes.
When eggs are cooked, peel and chop them roughly.
Stir all ingredients together and serve.
*Canned shredded chicken breast (in springwater) or fresh or canned crab
meat can also be used.
