Oat Choc Squares

This is a terrific recipe you can make with the kids and serve as a special after school snack. Prep time: 15 mins, cook time 35 mins, cooling time 10 mins.

  • 1 cup rolled oats
  • 1 ½ cups boiling water
  • 75g softened butter
  • 1 tsp vanilla extract
  • 1 cup plain flour
  • ¼ cup cocoa powder
  • 1 cup brown sugar
  • 1 tsp baking soda
  • 2 eggs

 

  • ¾ cup icing sugar
  • 1 tsp margarine
  • 1 tbsp cocoa powder
  • small amount of hot water

 

 

1) Preheat oven to 180c. 2) Grease a 30x23cm slice tin. 3) Put oats in a bowl and stir in boiling water. 4) Add butter and vanilla extract and stir then set aside. 5) Combine together in a bowl all dry ingredients; flour, sugar and baking soda. 6) Stir in oat mixture and eggs. 7) Combine all ingredients until smooth. 8) Pour mixture into tin and bake for 35mins. 8) Cool in tin for 10 mins then turn out and cool completely on wire rack. 9) Make Icing by combining sugar, margarine and cocoa powders. Add a little water to get a smooth consistency. 10) Spread icing over cooled slice, cut into small squares and serve.
