Pasta Fagioli

A cheap and easy meat free recipe.  Great for a weeknight.

  • 1 tbsp. olive oil
  • 1 tbsp. crushed garlic
  • 1 onion
  • 1 carrot
  • 3 sticks celery
  • 2 cups chicken stock
  • 1 cup water
  • 1 tsp. dried parsley
  • 1 tsp. dried basil
  • 200g macaroni
  • 425g tinned cannellini beans
  • Optional: prosciutto, parmesan

In a large saucepan add oil garlic, onion, carrot and celery (and prosciutto if using) and cook for 3 mins.  Add in 2 cups chicken stock, water, parsley and basil and simmer for 15 mins.    In a separate pot cook macaroni in boiling salted water for 10 mins.When cooked add macaroni to soup, add in beans and heat through.  Serve with grated parmesan on top (optional).
