Pesto Chicken Wraps

A simple twist to update chicken burgers.  Serves 6.

  • 500g chicken mince
  • 3 tbsp. pesto
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 iceberg lettuce (shredded)
  • 1 tomato (sliced)
  • 1/4 cup whole egg mayonnaise
  • 2-3 tsp. pesto
  • 6 bread wraps
  • 1 tsp oil or oil spray

 

Heat frypan with oil to medium heat . Combine chicken mince, 3 tbsp. pesto, egg and breadcrumbs.  Divide mixture into 6 equal parts and form into long sausage like patties. Brown patties in frypan then turn down heat to allow to cook through. Meanwhile, slice tomato and lettuce and combine 2-3 tsp pesto with mayonnaise. Once patties are cooked, build your wraps with chicken patties, tomato, lettuce and pesto mayonnaise. Season to taste.
