A colourful couscous to accompany lean pork steaks. Serves 4.
- 500g pork steaks
- 2 zucchini, 1 red onion, 1 large sweet potato, 2 carrots – cut into small cubes
- 2 cups couscous
- 1 tsp. chicken stock powder
- 1 tbsp. olive oil
- 3 tbs. olive oil
- 1.5tbs balsamic vinegar
Pre heat oven to 200C. Coat cubes of vegetables in 1 tbsp olive oil and bake for 20mins. In bowl add couscous, 1 tsp chicken stock powder and 4 cups boiling water. Cover and set aside for at least 5 mins. . Combine dressing ingredients and set aside. Grill pork to taste. Fluff couscous with a fork, add in roast vegetables and dressing and mix well. Season to taste.
