Potato & Asparagus Soup

Cold weather is a great excuse to make a big batch of soup for the whole family. It is also a great way to get kids to eat more vegetables. Serve 6

  • 1 tbsp. butter
  • 1 clove garlic (minced)
  • 2 white onions (sliced)
  • 2 medium potatoes (sliced)
  • 2 bunches asparagus (chopped)
  • 6 cups vegetable stock
  • 1 cup cream
  • 1/2 cup low fat sour cream
  • 2 spring onions (chopped)
  • salt & pepper to season

Melt butter in a large pot over a medium heat. Add garlic and onions and cook gently until onions are soft. Add potato, asparagus and stock and bring to boil. Simmer until potatoes and asparagus have softened. Take off heat and use a hand held blender to make a smooth soup. Add in cream and sour cream and mix. Season, sprinkle in spring onion and serve.
