This is a great recipe if you are looking for a last minute dessert option. All the cooking is done in the microwave so it is very simple and easy to make.
Serves: 4-6; Preparation Time: 5 mins; Cooking Time: 12 mins
- 4 cups (6-8) apples, peeled and thinly sliced.
- 2 tbsp lemon juice
- 1/2 brown sugar, well packed
- 1/2 cup uncooked oats
- 1/4 cup plain flour
- 125 g margarine/butter
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp nutmeg, ground
1) Place all sliced apples into a large microwave proof dish. 2) Top with lemon juice then microwave on high for approx 3 mins (will vary according to your microwave so keep an eye on it). 3) Once cooked set apples aside. 4) In another smaller microwave safe bowl, combine all remaining ingredients then heat on high in microwave for approx 3 mins, until the mixture is hot and bubbly. Give the mixture a quick stir after 1 1/2 mins. 5) Spread the hot mixture carefully over the top of cooked apples and cook in microwave for another further 5-6 mins. 6) Allow to cool slightly (or completely for young kids) then serve with vanilla ice cream, custard or pouring cream..
- Tip – Add a few sultanas, cranberries or coconut along with apples for a bit more variety.
