This is a really easy recipe that looks and tastes like a million bucks. Lemon Meringue Pie is a real favourite for young and old.
Serves: 8; Preparation Time: 25 mins; Cooking Time: 15-20 mins
- 250g pack of Arnotts Milk Arrowroot biscuits, crushed
- 100g butter, melted
- 395ml tin sweet condensed milk
- 3 egg yolks
- juice from 1 lemon
- 4 egg whites
- 2/3 cup caster sugar
- 1 tsp vanilla essence
1) Preheat oven to 160oC. 2) Combine crushed biscuits with butter then firmly pack into the base of an oven proof 9″ pie dish then place in fridge to set. 3) Combine condensed milk with lemon juice then mix in egg yolks. Mix well. Pour mixture on top of chilled biscuit base. 4) In a clean bowl, whisk up egg whites. Gradually add sugar and vanilla essence until egg whites become stiff and glossy. 5) Spoon fluffy egg whites on top of base. 6) Place pie into oven for 15-20 minutes, until the top of the meringue is golden. 7) Allow to cool then serve.
- Tip – Add less lemon juice to condensed milk if your kids are not big fans of that big lemon hit.
