Gourmet Garden Snapper With Ginger and Chilli

Gourmet Garden A sensational chinese inspired snapper dish from Gourmet Garden. Great for a healthy dinner or to impress guests. Snapper is a popular eating fish with a firm texture.  It is great for BBQ’ing and grilling and has a mild sweet flavour, making it great for use with herbs and spices.  Gourmet Gardens range of lightly dried herbs  are abut as close as you can get to the fresh stuff, but will last for approx 4 weeks. I tried this one out on the family and they loved it. I made sure the little ones had a piece without chilli but it wasn’t overly spicy anyway.  Add more if you like it spicy. Serves 4.  Prep 10mins, Cooking: 25mins

  • 850g snapper fillets
  • 1 teaspoon vegetable oil or butter
  • 1 large red onion, finely chopped 1 tomato, finely chopped
  • 1 teaspoon Gourmet Garden Lightly Dried Ginger
  • 1 teaspoon Gourmet Garden Garlic Stir-In Paste
  • 1/2 teaspoon Gourmet Garden Lightly Dried Chilli
  • 1 teaspoon Gourmet Garden Lightly Dried Coriander
  • 6 spring onions, finely chopped
  • 1 carrot, cut into matchsticks
  • 2 teaspoons soy sauce
  • 1/4 teaspoon sesame oil
  • 1 lemon, zested and juiced

 

  • 1. Pre-heat oven to 1900C.
  • 2.Mix all the ingredients, except for the fish, in
    a bowl.
  • 3 Place fish into a shallow baking tray and then cover with the mixture
  • 4 Bake in oven of for about 18-25 minutes until the fish is cooked and fragrant
  • 5 Serve with steamed rice or bok choy.
