Stuffed Capsicum “Rainbow Boats”

Rainbow Boats (Stuffed Capsicum) are a great recipe to make with the kids. Get them involved in picking their capsicum colour, combining the ingredients and most importantly, stuffing the capsicum! Who can resist this delicious and fun family dinner ideas? Cooking and preparation time: 40 minutes, Serves: 4-8

  • – 8 capsicums, no matter what colour. (hint: have each child stuff a different colour so they know which one is theirs)
  • – 2 cups of cooked Couscous
  • – small tub dried tomatoes
  • – 16 olives (optional)
  • – 1 tbsp of Olive Oil
  • – 2 spring onions, chopped
  • – 1 clove garlic, chopped
  • – a few basil leaves, roughly torn
  • – approx 200g Feta cheese, cubed
  • 1)  Start by preheating the oven to 200 degrees.
  • 2)  Sauté spring onions and garlic in the oil until translucent. Add the tomatoes, then add the couscous, feta, olives and basil. Cook for 3 minutes, season with salt and pepper to taste.
  • 3)  Cut the capsicums in half and remove seeds and vein.
  • 4)  Stuff the capsicums with the couscous and vegetable mixture.
  • 5)  Cook in the oven for 30 minutes.
  • 6)  Serve with a side salad or extra veggies and enjoy your Stuffed Capsicum!
  • Tip: For alternatives you can stuff the capsicum with other seasonal veggies with the rice instead of the corn.
