Tomato Bruschetta

A quick afternoon snack or starter to an Italian dinner. Serves 6

  • 1 loaf garlic bread (store bought)
  • 6 roma tomatoes (diced)
  • 1 bunch basil (finely chopped)
  • 1 red onion (finely diced)
  • 1/2 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • salt & pepper

Place garlic bread into oven, as per pack directions. Mix diced tomatoes, onion and basil together in a bowl. Add balsamic vinegar, olive oil and salt and pepper and stir well. Allow to sit in refrigerator until garlic bread is ready. Pile tomato mixture on bread while bread is still hot, including vinegar/oil liquid and serve immediately.

NB. The longer you leave the tomato mixture in the refrigerator, the more infused the flavours will be.
