Don’t worry if you’ve been too busy to buy the oysters and figs. You can make these super easy muffins and dress them up to look like a romantic dessert and you’ll probably have most of the ingredients already. Enjoy Valentine’s Day! Makes: 6 muffins, Prep time: 5 mins, Cooking time: 20 mins.
- 1 cup plain flour
- 1 1/2 tsp baking powder
- 2 tbsp strawberry jam
- 1 egg
- 2 tbsp vegetable oil or margarine
- 1/4 cup brown sugar
- 1/3 cup milk
- 1 small carton cream
- 1 tsp vanilla extract
- 1/4 cup icing sugar
- 1 punnet strawberries
1) Preheat oven to 180oC. 2) Combine the flour, baking powder, strawberry jam, egg, brown sugar, oil and milk in a bowl and mix until mixture is smooth. 3) Divide mixture and put into a 6 muffin tray (you can use cupcake patties if you wish). 4) Place in oven for 20 mins. 5) Pour cream into a clean bowl and beat. 5) Just before it has soft peaks, add in vanilla extract and slowly add in sugar while you beat to soft peaks. 6) Once muffins are totally cool, spoon on cream and top with sliced strawberries. Enjoy with someone you love.
Tip: Eat any left over strawberries with left over cream as a romantic treat.
